Slow Cooker Pork Tenderloin
2 lbs pork tenderloin
(I used 2 med sized tenderloins)
4 med carrots (or other veg if desired)
4 lg potatoes
1 lg onion
2 lg apples (peeled and cored)
4 cloves garlic
1/4 cup orange juice
2 cups chicken stock
1 tsp dry mustard
1/2 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
1 Tbsp brown sugar
salt and pepper to taste
Method:
- Brown 1 inch thick medallions of tenderloin and put in crock pot on high to keep warm.
- Chop veggies into bite sized chunks and layer over tenderloin.
- Puree onions, apple, garlic and orange juice in a blender or food processor.
- Saute the puree in butter for 3 minutes.
- Add spices to puree and saute another minute.
- Add chicken stock and sugar and bring to a boil.
- Pour puree over pork and veggies.
- Cook 3 hours on High or 5-6 hours on Low.
I did 2.5 High and 2.5 Low... perfect.
