Slow Cooker Pork Tenderloin

It's a rainy Saturday here and it seemed like a great day for a warm, hearty meal so I broke out the slow cooker this morning to put on supper for this evening. It's almost ready now and it smells awesome all through the house! This recipe is my own but it pulls the method from the wonderful Chicken Korma we made last week.

Slow Cooker Pork Tenderloin
2 lbs pork tenderloin
  (I used 2 med sized tenderloins)

4 med carrots (or other veg if desired)
4 lg potatoes
1 lg onion
2 lg apples (peeled and cored)
4 cloves garlic
1/4 cup orange juice
  2 cups chicken stock
  1 tsp  dry mustard
1/2 tsp  cinnamon
1/8 tsp  allspice
1/8 tsp  nutmeg
  1 Tbsp brown sugar
salt and pepper to taste

Method:
  1. Brown 1 inch thick medallions of tenderloin and put in crock pot on high to keep warm.
  2. Chop veggies into bite sized chunks and layer over tenderloin.
  3. Puree onions, apple, garlic and orange juice in a blender or food processor.
  4. Saute the puree in butter for 3 minutes.
  5. Add spices to puree and saute another minute.
  6. Add chicken stock and sugar and bring to a boil.
  7. Pour puree over pork and veggies.
  8. Cook 3 hours on High or 5-6 hours on Low.
    I did 2.5 High and 2.5 Low... perfect.
